Working 24 Hours Straight at Waffle House | Bon Appetit

Bon Appetit's Andrew Knowlton works a 24-hour shift at Waffle House. The first Waffle House diner opened in Atlanta, Georgia in 1955. Today, the chain restaurant has more than 1,700 locations in 25 states, mostly in the South. Waffle House is known for being open 24 hours a day, 365 days a year. Knowlton's full day on the job starts a little before 7 AM. All Waffle House employees must be either clean-shaven or wear a beard guard, so Knowlton decides to shave the beard. Once Knowlton has his uniform, his on-the-job training an orientation begins. He gets to work making bacon, eggs, waffles, Texas toast, and hash browns. During his down time, Knowlton sits down with Waffle House co-founder, Tom Forkner to learn more about the eatery's history. One of the daily tasks at Waffle House for employees is mixing waffle batter using a power drill attached to a whisk. From there, Knowlton powers through the lunch shift into the evening hour dinner rush and well into late night. As early morning approaches again, Knowlton has lost all track of time but has gained appreciation and admiration for all Waffle House employees. Overall, the food was good, but not the best Sri Lankan food I had. Flavors tasted too similar to each other. It is a good place to taste variety though. Dilmah Tea Lounge - After lunch we headed to a Dilmah Tea Lounge and drank a few teas all of which were very good. Ministry of Crab - Rated as one of Asia’s 50 Best Restaurants, Ministry of Crab is one of the most iconic restaurant serving seafood and especially Sri Lankan crabs in Colombo. It’s a high end restaurant, with prices that go with it, but I do have to admit that it was extremely tasty. The river shrimp, the black pepper crab was delicious. Price - about 30,000 LKR ($165.53) per OMG crab - I think it’s overpriced - but it is good. The Lunch Lady of Saigon - Famous Street Food in Vietnam!

The Lunch Lady is one of the most famous street food restaurants in Saigon, Vietnam. Get all the details here: http://wp.me/psd9b-5ev Nguyen Thi Thanh, better known as the Lunch Lady, owns and operates a street food stall in Saigon that serves soup noodles. The restaurant was made famous by Anthony Bourdain, who ate there on his No Reservations show on the Travel Channel, and deeply loved both the noodles and the experience of eating there. So during my trip to Saigon, along with eating all sorts of incredibly delicious Vietnamese street food, I made it a point to eat at the legendary Lunch Lady. One of the cool things about the Lunch Lady in Saigon is that she serves a different noodle soup dish everyday of the week. After reading about all the days and her rotating menu, I decided to go on Monday, because I wanted to try her version of bun Thai, a Vietnamese and Thai fusion noodle dish. As we arrived for lunch, the restaurant was already buzzing with customers, both tourists and many locals as well. I could immediately sense the kindness and the passion of the food I was about to eat. I ordered a large bowl of noodles, which didn’t take long to arrive, and I was impressed with the beautiful decoration of ingredients and the colors of everything together. In order to make the bun Thai, the Lunch Lady first added a handful of bun, or rice noodles to a bowl, topped it with a few rings of squid and some beef, then ladled on a spoon of the slow and continual simmering broth. Then in went a handful of sliced vegetables and herbs, and finally a couple of shrimp on top. The bowl of bun Thai smelled incredible, slightly sweet and sour, with a lovely acidic, almost citrus aroma to it. Before adding any condiments, I first decided to try the soup. It tasted almost the same as it looked, sour and sweet, and with a lovely balance of flavor. I’m not sure what meat the soup was based from, but I think it was beef. Being a lover of chili, I decided to dress my bowl of noodles with some fresh dry roasted chili oil, along with a squeeze of lime juice. The chili added some much needed heat, while the lime juice gave it a bit more sourness. The noodles were slightly chewy and about the size of spaghetti, and the mixture of ingredients was superb. One of the things I really like about how the Lunch Lady assembled her bowls of noodles was that she cooked the items separately, so nothing got overcooked. Along with serving bowls of noodles, there’s a stall next to the Lunch Lady that serves goi cuon, or Vietnamese fresh summer rolls. As a lover of the fresh summer rolls, I couldn’t resist, so we ordered a plate, that came with 3 rolls. They were very fresh tasting, and I thought they were some of the best I had during my trip to Saigon. The rolls were filled with lettuce and basil, a couple of shrimp, and I really enjoyed the hoisin sauce topped with peanuts and fresh chilies. The Lunch Lady was a great Vietnamese street food experience in Saigon. I’ve only eaten there once, and I ate the bun Thai, so I for sure can’t say how the food is everyday, but the day I went it was pretty decent. On top of the good food, just as Anthony Bourdain mentioned, the Lunch Lady is a fantastic atmosphere - it’s in the shade, it’s a nice location off the main road, and there was a beautiful breeze as I slurped down my bowl of noodles. Overall, I was very happy, and even though the Lunch Lady is very famous, it’s worth a visit when you are in Saigon. And on top of that, Nguyen Thi Thanh is also very nice. Prices: 40,000 VND ($1.83) for a nice sized bowl of noodles, pretty decent portion size How to get to the Lunch Lady: The restaurant is located not far from the Saigon zoo, tucked away into the neighborhood. We took a ride on the world-famous Goodyear Blimp as it flew above the Daytona International Speedway where it provided aerial coverage for NASCAR in February. Our journey began at the Blimp Base in Pompano Beach, Florida — from there, the Blimp flew 200 miles north to a small airport in New Smyrna, where it would call home for the weekend.  We got to spend about five hours in the Blimp, which was updated in 2014 in collaboration with the Zeppelin company. The new model isn't technically a Blimp, due to the internal structure inside its balloon, or envelope. During the Best of Sri Lanka Food Tour with The Hungry Tourist, we were invited by Uchith and Nick to a relatives home, where they prepared a massive home cooked village cooking and eating experience. I went a little early to see some of the Sri Lankan food cooking and as they prepared all the dishes. Most of the Sri Lankan food dishes were prepared in earthenware clay pots, cooked over fire to give each dish an incredible complexity and smokiness. There were more than 19 different Sri Lankan food dishes that they prepared and that we tasted during the day. Some of the dishes were local regional southern Sri Lankan food, and each was spectacular in flavor and complexity of spice. I wanted to take a little of every single dish, and my plate piled up so high, I didn’t ever realize it. It was an absolutely Sri Lankan food feast! This is the sprawling complex of Angkor Archaeological Park. The site is located in the northwestern region of the country and is only four miles from the city of Siem Reap. The Khmer Empire’s various capitals thrived here from the 9th to 15th centuries, over an empire that stretched from Myanmar to Vietnam. Including forested areas and newly discovered “suburbs” Angkor covers more than 400 square miles—an area considerably larger than New York City’s five boroughs. The massive Angkor Wat is the most famed of all Cambodia’s temples—it even appears on the nation’s flag. The 12th century “temple-mountain” was built as a spiritual home for the Hindu god Vishnu. The temples of Angkor are architectural masterpieces laden with artistic treasures like the bas-relief galleries that tell enduring tales of Cambodian history and legend. Angkor is as much about water as it is about stone—the site boasts an enormous system of artificial canals, dikes, and reservoirs. The West Baray reservoir is the largest of which at 5 miles long and 1.5 miles wide. These massive works skillfully harnessed river and rainwater to quench the thirst of some 750,000 residents in the world’s largest preindustrial city. That water also irrigated wealth-producing crops like rice, which served the Khmer as currency. It’s still a mystery to scientists why the city’s rulers abandoned the site and resettled near the modern capital of Phenom Penh. Some scholars speculate that the downfall of this elaborate water system led to the end of Angkor. The town of Siem Reap is the gateway to Angkor and is filled with lodging, dining, and tour-package options for all budgets. Those preferring to travel by boat can also make the trip from Phnom Penh in some five or six hours—about the same travel time as by road. The airport in Siem Reap has service to Phnom Penh and regular flights abroad to Thailand, Singapore, Vietnam, and Laos. The airport in Siem Reap has service to the capital and regular flights to nearby countries. Peak tourist season in Angkor is December and January, when rainfall is less likely and the climate is most kind. No matter the time of year, a visit to Angkor is sure to leave you awestruck. Here we give you a list of our five most common reasons why tourists have gotten arrested. Alcohol Related Arrests: whether it is drunk driving, public intoxication or getting into a fight while drunk, alcohol has played the part in a number of tourists and travelers run ins with the law. 2. Drug related arrests: just because you are on vacation doesn't mean the cops will look the other way and that holds true for drug use as well. Many travelers have ended up serving time in jail for drug offenses abroad. 3. Not knowing the laws of the land: ignorance is not an excuse not to know the law, at least that is what the cops will tell you abroad. Make sure you know of any laws that may affect you while you travel. 4. Trespassing: you may want to get the world's best selfie, but if you are doing onto private land or going off of the official path at national parks you may be trespassing and that can lead to a severe fine or worse. 5. The Sauna Culture: Do expect to head into a sauna during your time in Finland. It is such a part of the culture that people have them built into their homes, and yes do expect to go naked and run out and jump into the snow for a little extra fun. 2. The Finns Can Talk While Inhaling: the Finns have so much to say when they do talk that they actually can talk while they exhale and while they inhale. Quite a sight when you see it for the first time. 3. The Natural Beauty of Finland: from the lakes and forests to the parks and islands Finland boasts a ton of nature and the locals love it. So whether it is skiing in Lapland or mushroom hunting or visiting the archipelago islands you will see so much beauty in Finland. 4. How Quiet the Finns Can Be: the Finns enjoy silence and you will see that in stores, on the street, and especially on public transportation. So do keep it down. 5. How Clean Finland Is: from pristine forests, to amazing clean and crisp air, to the locals having pride and keeping their cities and towns clean, Finns do love a clean country. Oh, and never wear your shoes in someones house. 6. Finnish "Tasty" Treats: Salmiakki is the child of black licorice and salt, and I mean that in the least tastiest way possible. The Finns love salmiakki candy (and Finland has a ton of great candy aside form Salmiakki). So be prepared for some great tasty treats, like their cinnamon rolls and anything made with mushrooms and do watch out for the funny ones. 7. How Difficult the Finnish Language Is: luckily for tourists most Finns speak very good English, so you do not need to speak any Finnish. The Finnish language is considered one of the most difficult languages to learn and when you see all those vowels you will understand why. 8. The Cities Have Two Names: in Finland, Finnish and Swedish are the two official languages and so all the signs on the highway are in Finnish and Swedish. This can lead to a bit of confusion when the cities don't have similar names in both languages, for example Turku is Turku in English and Finnish, but Abo in Swedish. 9. Finnish Logic: for as smart and clever as the Finns are some foreigners sometimes get lost in Finnish logic. When you see something around the country that just doesn't quite make sense, just chalk it up to Finnish logic. 10. You Have to Go to a Government Store to Buy Hard Alcohol: if you want to grab a bottle of Finlandia Vodka in Helsinki you can't just head to the local grocery store. You have to go to Alko, the government run liquor store. You might not remember it, but at one point Hooters had an airline. Hooters Air launched in 2003, but closed about three years later. The company cited a number of reasons for the airline's failure, including a $40 million loss. But in the short time that Hooters Air existed, it made a major economic impact on one city in particular — Myrtle Beach, South Carolina — that's where the airline was headquartered, and where it brought thousands of tourists every week. We talked to people who worked for Hooters Air — flight attendants and one pilot (who asked to remain anonymous). They told us what it was really like to work for the airline (which featured two Hooters Girls on every flight) and dispelled some common misperceptions about what it was like to fly it.
